摘要
实验选取市售免淘米为试材,模拟居民消费过程进行贮藏,调查采用自然种植与洗涤稀释法,并结合菌种在米样中的回接鉴定,分析不同贮存方式下免淘米的霉菌污染情况。结果表明:免淘米购买后每周的霉菌平均侵染率依次为1.33%、3.33%、11.33%、12%和11.33%,其中置于日晒环境中的大米含菌量波动较大,存放于柜子中的大米含菌量较为稳定。
Choosed washless rice as experiment material, the paper is about an investigation of mould contamination during the consumption by resident. The method of investigation are natural planting and dilution by washing-up, and combined the reinoculate identification of mould return in rice, analyzed the contamination instance of mould in different conditions of storage. The result showed that the average 1.33 %, 3.33 %, 11.33 %, 12 % and 11.33 % of them were eontaminated by mould every week during the consumption.The amount of mould contamination in rice stored under the sunshine was heavily fluctuated,and more steady in the cupboard.
