摘要
鱼精蛋白是存在于各类鱼精巢组织中的一种多聚阳离子肽,具有功能性和高效、安全等特点,是值得开发的一种新型天然食品防腐剂。对鱼精蛋白的理化性质、提取工艺、抗菌机制和存在的问题及展望等方面进行了简述。
Protamine is polycationic peptide found in the sperm of different fish species, also it is effective, safe and worthy of exploitation as a new - style natural food preservative. This article reviewed its physical and chemical property,extract technics, antimicrobial principium, defection, existent question and prospect of protamine.
