摘要
以10个来自国外的芦笋品种(代号为A1-A10)为试材,分析比较各品种嫩茎中可溶性蛋白、类胡萝卜素、维生素C、可溶性糖与还原糖、黄酮以及Fe、Ca、Zn、Mn等微量元素含量,并对供试品种的营养价值进行综合评价。结果表明品种间各营养指标差异明显,不同的营养指标在品种间差异趋势和差异幅度各不相同。在供试的10个品种中,A9的营养品质特性综合分值最高,而重要药用成分类黄酮则A1的含量最高。
The nutritional quality of asparagus (Asparagus officinalis L. ) spears of 10 different varieties from abroad (referred to as A1-A10 in the text) were studied. Results indicated that the contents of soluble sugar, reducing sugar, soluble protein,carotene, progestin and the minerals of Fe, Ca, Zn and Mn differed significantly among varieties. A9 gave the highest score in synthetic nutritive evaluation, and A1 gave the highest content of progestin.
