摘要
牛初乳是指奶牛产犊后几天内所分泌的乳汁,含有丰富的营养成分。目前已在初乳中测出50余种酶,它们具有重要的生物功能。因此,牛初乳不仅是新生幼儿及仔畜最理想的食品,也是优良的纯天然保健食品。笔者介绍8种牛初乳中存在的酶,并对其功能和酶活力变化作简要阐述。
Bovine colostrums which are rich in nutrition is the milk that the cow secretes in a few days after parturition. Now scientists have already discovered over 50 kinds of enzymes in bovine colostrums. They have important biological function. So bovine colostrums are not only the best food for new-born infant , but also the excellent natural health food. In this paper, eight kinds of enzymes existing in colostrums are introduced, and the function of enzymes and enzyme activity change are summarized in brief.
