介绍了吸附法固定糖甙酶的方法及用此固定化酶和自由的糖甙酶催化合成烷基葡萄糖甙的工艺 ;在酶催化合成烷基葡萄糖中 ,水的含量对反应起了关键性的影响 ,最佳的含水量在 8%~ 1 0 %左右 ,反应物含水量高 ,则开始时的反应速度大 ,但最终平衡的产物浓度却较低 ,反之亦然 ;烷基链的长度既影响反应速度又影响平衡产量 ,链越长 ,反应速度和平衡产量越低 ;用于固定酶的载体对固定酶的活性有较大的影响 ,使用不同的载体酶活力可相差 3倍以上。用固定酶可以解决酶的重复使用问题。
