摘要
测定了苹果新红星和红富士品种在不同成熟衰老过程中乙烯与活性氧代谢的变 化。结果表明,在室温和冷藏条件下贮放,随贮放迸程果肉硬度下降,超氧物歧化酶和过氧化 物酶活性降低。低温抑制果实丙二醛积累,推迟乙烯峰期出现,并且保持组织中较高的超氧物 歧化酶活性。温度对过氧化物酶活性的作用效果困品种而异。
