摘要 玉米淀粉是优良的饲料和工业原料,具有重要的经济价值。从影响玉米淀粉生物合成的酶出发,讨论玉米可溶性淀粉合成酶的主要理化性质、催化机理、分子机理等方面取得的研究进展,并提出了今后需要进一步研究的方向。 The starch is the major calories source in the human diet and a widely utilized in industrial raw material. In this paper ,the recent progress of the physical and chemical properties, catalytic reaction mechanism and molecular mechanism and interaction of maize(Zea mays L.) soluble starch synthase were discussesed.
