摘要 通过研究国内外餐饮业应用HACCP体系情况,对我国餐饮业推行HACCP存在的问题进行分析,提出我国奥运餐饮业HACCP的应用时的关注点,奥运餐饮业应通过提高HACCP体系的实效性、加强人员培训、进行源头管理等措施,建立实施有效的HACCP体系。 The application of HACCP system in Catering sector abroad and at home was studied, the problem lying in the implementation of HACCP system in Catering sector was analyzed, the attention point of the application of HACCP system in Catering sector at the Olympic game was proposed. The HACCP system should be established and implemented efficiently through the measures such as improving the actual effect of HACCP system, strengthen the training of the employee, management the source by the Catering sector at the Olympic game.
