摘要
中国儿童的每日膳食中普遍缺乏维生素和矿物质,需要在日常膳食外进行营养补充。本研究在考察目前我国儿童营养状况,以及不同食品原料营养特点的前提下,采用酸奶、胡萝卜、猕猴桃为主原料,柠檬和山楂为辅料,开发纯天然、高安全性的新型儿童营养补充食品。研究通过正交试验设计和感官评价,确定最优的产品配方。结果表明,猕猴桃泥添加天然柠檬汁5%、低聚果糖10%、黄原胶0.3%、胡萝卜泥添加山楂5%、低聚果糖10%所制得的产品具有风味好、营养价值高的特点,确定为最优产品配方。
Vitamins and minerals are commonly lack in Chinese children daily meals, so food supplement is necessary, For the nutrition condition of Chinese children and characteristic of different material, the research developed the natural and secure new pattern food supplement for children nutrition with yoghurt, carrot, kiwi as main materials and lemon, hawthorn as accessories. By means of orthogonal design and organoleptic investigation, the research obtains the optimal prescription of product. The result shows that, the prescription of kiwi purees with 5% lemon juice, 10% FOS, 0.3% Xanthan as well as carrot purees with 5% hawthorn, 10% FOS make the product have good taste and high nutrition value. It is established the optimal prescription of the product.
