食品安全环境下的肉类食品可追溯系统的构建 被引量:27

摘要 食品安全问题已成为全球共同关注的问题,为了加强食品安全管理,许多国家正在研究和实施食品可追溯系统。随着社会对食品安全的关注,人民生活质量的不断提高,我国食品安全问题及面临的形势十分严峻,必须加快构建可追溯系统来保障肉类食品安全。笔者在综述肉类食品可追溯系统的基础上,分析和研究适合国情的可追溯系统所需的技术,并对可追溯信息系统进行需求分析,进而建立可追溯信息系统的功能模型,指出了可追溯系统的发展方向和趋势,讨论了可能存在的问题并给出了建议,为实施可追溯系统提供参考。 Food safety has roused global attention. In order to strengthen food safety management, many countries are developing food traceability systems. However, with the increasing attention to food safety, food safety status in our country is becoming more and more serious. Therefore, a traceability system must be constructed to guarantee meat product safety. Based on the analysis of meat products traceability system implemented in other countries, technology required in the traceability system and suited for China's situation is put forward. The requirement analysis of traceability system is made, by which a traceability informarion system functional model is constructed. Finally, the trend and direction for the development of traceability system is pointed out; possible problems are discussed and suggestions are provided, which may provide some reference for the implementation of traceability system in China.
