摘要
饮食文化是人类饮食行为、观念、技术及其产品的总和,是人类自然选择、约定俗成的同自然界与人文环境相适应的饮食生活方式,饮食文化学就是以此为研究对象的专门学,通过研究揭示规律并力图从饮食文化的视角诠释文化人类的本质。因此,饮食文化学既是人类文化学体系中的分支学科,又具有食品科学边缘学科的属性。
Dietary Culture is the sum total of human dietary behavior, conception, technology and its products. It shows human natural choice and dietary way of life which is suited to the nature and human environment through common practice. Dietary culture science is namely the specialized branch in studying what is pointed above. Its studies try to reveal the laws of its development and focus their efforts on the annotation of the essential aspect of human culture, viewing from dietary culture angles. Therefore, dietary culture science possesses the attribute of the frontier branch of food science and it is a branch of human culture science as well.
