先秦食品科技的特点及其评价

摘要 食品科技是指从食物来源到食品加工、包装、贮藏(保鲜)、运输、销售、消费等过程中形成的知识体系、工艺操作方法与技能的总和。先秦食品科技中,食物原料的丰富性、制作方法和食品的奇特性、原料及其加工过程的安全性和实用性等诸多特点,可为当今的食品开发提供启迪。 We say food science and technology is, in fact, the sum total of knowledge system, technological operation and technological skills. It includes food resources and is formed in the process of food processing, food packing, storing (fresh-keeping), transportation, selling, consuming and etc. While studying food science and technology of Pre-Qin Dynasty we find that food raw materials were abundant, food processing methods were peculiar, materials and their processing were secure and practical at the time. The above characteristics give us a great deal of enlightenment for the food development at the present time.
