乳脂的风味及其影响因素
摘要
在可食用油脂中,乳脂肪独特的风味受到人们的青睐,而且它是唯一可用于加工的主要脂肪。本文主要对乳脂的风味、引起乳脂风味败坏的主要原因及影响乳脂风味的因素进行了综述。
