摘要 啤酒中的有机酸是一类重要的风味物质,其种类和含量直接影响啤酒的口味。该文探索了一种简单、快速测定啤酒中挥发性有机酸的方法,样品经中和、浓缩后,未经衍生处理直接注入气相色谱PEGA填充柱进行分析。实验表明,此法柱平衡时间快,色谱图清晰明了,重复性好,且保留值定性十分方便。 Organic acids are important flavor ingredients in beer. The composition and content of different organic acids directly affect the taste of beer. A simple method was explored to detect volatile organic acids in beer rapidly in this study. The sample was injected directly for gas chromatography analysis without derivative treatment after neutralization and concentration. And the PEGA column was used. The results showed that with this method, the balance time of the column was shortened and the definition of the chromatography map was improved. Simultaneously, the results could be repeated and the oualitative determination of retention value could be processed conveniently.
