信阳毛尖茶的化学成分研究

信阳毛尖茶是中国传统名茶之一,品质优异。对信阳毛尖茶的主要化学成分进行了综述和分析,结果表明,信阳毛尖茶的茶多酚含量、儿茶素含量及非酯型儿茶素比例较高,氨基酸含量、咖啡碱含量、可溶性糖含量也比较高,形成了信阳毛尖茶鲜浓、爽口、耐泡的滋味特征;叶绿素含量高于多数嫩度相近的名绿茶,使其具有干茶色泽翠绿的品质特征;信阳毛尖茶还含有丰富的无机元素。
