摘要
本文研究了经瞬时高压处理后的荷叶膳食纤维,不同干燥法对改良纤维对不饱和脂肪、饱和脂肪及胆固醇的吸附作用的影响。研究结果表明:瞬时高压处理(压力为120MPa)能改善膳食纤维的物理性能,喷雾干燥是一种既经济又有效保护改良纤维物理性能的干燥方法。
Study instantaneous high pressure (IHP) was used to modify the physical properties of lotus leaf dietary fibre, and the effect of different dry methods on reformed fibre adsorptive properties, including unsaturated fat, saturated fat, cholesterin. The results showed that instantaneous high pressure (pressure 120MPa) can effectively modify the physical properties of lotus leaf dietary fibre, and spray dry method is a economic and effective dry method to protect physical properties of reformed dietary fibre.
