摘要
本文主要以山胡萝卜(沙参)CodonapsislanceolataBenth.etHook.这种传统山野菜为代表进行研究,采用酶解破壁法、超声波破壁法等方法将沙参中有效物质迅速溶出,通过合理的工艺保证其功能性因子的活性,确定其提取的最佳工艺路线及山野菜保健饮品的工艺参数,配制出高营养、低热量、口感良好的绿色饮品。
Extraction technology of functional components in Codonapsislanceolata Benth. et Hook. with enzyme hydrolysis and ultrasonic for breaking cell was studied. During the processing, the activities of functional components were kept by reasonable measures. The optimum conditions for extration of functional components and preparation of potherb health beverage were obtained. On these conditions, nutritional, low caloric, good tasty green beverage was obtained.
