摘要
综述了羧甲基纤维素钠(CMC)的结构、性质、功能特性及其在食品工业中的应用,展望了其发展前景,旨在进一步开发CMC新产品和推进食品工业的发展。
In this article, structure and character and application of sodium carboxymethyl cellulose in the food industry were surveyed. The development prospect of sodium carboxymethyl cellulose has also been looked forward in the paper, so that the new product can be explored and the food industry can be promoted.
