芜湖市食品卫生监督量化分级管理评审结果分析

Analysis on the Quantifying Appraisal Index System of Food Sanitation of Restaurants in Wuhu

摘要 目的 研究食品卫生监督量化分级管理的成效与存在问题,为更好地加强餐饮业卫生监督管理提供依据。方法 对芜湖市2004年-2005年餐饮单位和集体食堂量化分级管理审核结果进行分析。结果 审核的60家餐饮单位中,达到A级综合评分标准的7家,达到B级的25家;综合评分最高为98.75,最低为74.42分,平均86.59分。审核不合格的主要原因是关键项目缺陷,如餐厨比、后场布局、生熟交叉、不合格食品等不符合卫生要求。结论 食品卫生监督量化分级管理应该引起民众的广泛关注,应该在引导餐饮业业主提高食品卫生水平方面发挥极其重要的作用。 Objective In order to improve the level of administration of food sanitation and provide the quantifying appraisal index system as a tool to promote the effect of new sanitation inspoction mode. Methods From 2004 to 2005, the 60 restaurants which could accommodate more then 100 guests were evaluated according to Sanitary permission examination and Inspection Quantification Score Chart for restaurants & Frequently Sanitary Inspection Quantification Score Chart for restaurants. Results 7 of them were given A grade index. 25 of them were given B grade index. The highest index was 98. 75. The lowest index was 74.42. The average was 86.59. The main reasons of failure included unreasonable dining - kitchen ratio and arrangement of back court, mixing of cooked and uncooked food, and unsatisfactory food quality. Conclusions It is important to take proper measures to introduce the quantifying appraisal index system of food sanitation and make it a wide public concern. It should play an extremely important role in conducting the restaurants proprietor to improve the level of food sanitation.
