介绍了乳酸菌胞外多糖研究,主要包括乳酸菌胞外多糖的种类和合成、遗传调控、生理功能、分离纯化和结构分析、构效关系及应用。
The study of exopolysaccharides (EPS) production by Lactic acid bacteria was introduced, including the species and synthesis of exopolysaccharides, genetic adjusting, physiological functions, isolation and purification, structural analysis, the relation of structure and function and application.
