摘要 (华南理工大学轻工与摘要:脉冲电场是目前最有潜力的非热灭菌技术之一,本文介绍了脉冲电场非热灭菌技术的优点以及目前研究中存在的不足,并对栅栏因子保鲜理论内容进行了阐述,将脉冲电场非热灭菌技术联合食品中其它栅栏因子使用以达到协同增效的研究进展进行了综述。 Pulsed electric field is one of the most potential nonthermal technologies. However, there are still some disadvantages with pulsed electric field. So this paper introduced the theory of hurdles technology of food preservation and applied the hurdles technology to pulsed electric field treatment. The development of combination treatments of pulsed electric field and other hurdles is introduced.
