壳聚糖/海藻酸钠制备八角茴香油微胶囊的研究 被引量:22

摘要 以八角茴香油为心材,壳聚糖、海藻酸钠为壁材,对八角茴香油进行微胶囊化研究。结果表明,海藻酸钠质量分数为3.0%,壳聚糖质量分数为1.0%,氯化钙质量分数为2.0%,壁材与心材质量比为1/3,pH值为5.0时,制得的八角茴香油微胶囊包埋效果最好,包埋率为51.05%。 Star aniseed oil is composed of volatile spicery components and it is easy to be oxidized, which limits its storage and application. Microcapsules of star aniseed oil are prepared,it can effecfively restrain the volatilization and oxidation of the star aniseed oil,the storage stability can be improved. The production technology of star aniseed oil microcapsule with chitosan and alginate was studied in this paper. The results showed that the optimum conditions for microencapsulation were established as follows: the alginate concentration as 3.0%, chitosan concentration as 1.0%,calcium chloride concentration as 2.0%,the ratio of wall-material and core-material was 1 - 3,pH was 5.0.
