摘要
酶解蛋白质产生的短肽混合物中,一些肽段不仅提供营养,而且具有特殊生理功能,称为活性肽。目前,由于蛋白酶解制备法可实现规模化大生产,活性肽的主要生产方法是酶法制备活性肽。本文讨论了酶法制备活性肽工艺流程的主要步骤,判定酶解效果的指标,酶的选用,酶解各种影响因素如温度,酸度,加酶量,底物浓度,水解时间等对应参数确定。对当前存在的问题,提出了理论上的的解决方法,并对在新的技术背蒂下,如何更高效率的生产活性肽进行了展望。
In the mixture of short peptide produced from Enzymolysis of protein ,somc pcptide not only have nutrition ,but also have special physiologic function, we name those as active peptide. At present,as the way of preparation of active pcptide through enzymolysis can be used in a large scale, the main way of preparation of active pcptidc is the way of preparation of active peptide through enzymolysis, we discuss that what is the main process of preparation of active peptide,the index of decision of cnzymolysis effect,the choose of enzyme,and all kinds of influential factor,e.g temperature,acidity,the quantity of addition of enyme, concetration of substrate,the time of enzymolysi^nd how the corresponding parameters are decided.we offered the theoretic resolvent of the current question.And in the setting of new technology,we look forward that how to improve the efficiency of active peptide producing.
