The importance, sources, biosynthesis, production and downstream processing of microbial lipids and its polyunsaturated fatty acids were discussed. The new biological techniques （for example mutation methods, genetic engineering, the use of desaturase inhibitors and enzymatic biotransformations） were emphasized to increase new species of PUFA and improve its value in order to compete with PUFA from other sources.
