摘要
对以米醋、姜汁等为原料制作的保健姜醋饮料的配方进行了研究。通过正交试验,确定了姜汁米醋饮料的配方,开发出了一种口味良好,具有一定保健功能的姜汁米醋饮料,并对其稳定性进行了研究。结果表明:姜汁米醋饮料的最佳配方是米醋5%、姜汁8%、糖和蜂蜜8%、稳定剂0.01%。
Studies were carried out on the formulas of ginger-rice vinegar health drinks. A drink characterized by good taste and health functions was obtained by orthogonal tests and its stability investigated. The results showed the best formula as follows: rice vinegar 5%, ginger juice 8%, sugar and honey 8% and stabilizer 0.01%.
