摘要
[目的]研究不同浓度硒溶液对稻谷生长及芽米含硒量的影响,并初步探索硒的有机化程度。[方法]以市售稻种为样本,采用亚硒酸钠供硒,观察稻谷发芽情况并检测芽米中硒及有机硒的含量。[结果]硒溶液浓度为1.25mg/L、2.50mg/L、5.00mg/L时,对发芽具有促进作用,发芽率高于对照组,当硒溶液浓度为10mg/L、20mg/L时稻谷发芽率稍有下降,但稻谷对硒的富集量达到了普通大米的40~76倍,当硒溶液浓度达到40mg/L以上时对稻谷发芽产生了明显的毒害作用。在进行有机硒测定时,将处理后的富硒芽米样品不经消化直接测定其无机硒含量,间接计算得到有机硒含量高达98%以上,硒的有机化程度更为合理。[结论]提出培养富硒芽米的较佳生产工艺:20mg/L的硒溶液浸种培养65h后获得的富硒芽米硒含量为3mg/kg,为普通大米的76倍,且有机化程度达到98%以上。
[Objective] To study the growth performance, selenium content and the degree of organification in rice after cultivating paddies in selenite solution of different concentration. [Methods] In cultivating Se-enriched rice, using sodium selenium as selenium sources, the paddies germination condition was observed and the selenium content was determined. [ Results] The paddies germination was promoted at lower selenium concentration (1.25 mg/L, 2.5 mg/L, 5 mg/L), while it was prohibited at higher selenium concentration .(10 mg/L, 20 mg/L), but selenium absorption concentration was 40-76 times as many as general rice. The paddies growth was dearly poisoned at selenium concentration above 40 mg/L The inorganic selenium was directly determined from the sample which was not digested and organic selenium invert rates were calculated indirectly to be above 98 percent in the rice. [Conclusions] The paddy soaked in 20 mg/kg sodium selenite solution for 65 h are satisfying for the selenium content 3 mg/kg and the degree of organification over 98% of the total.
