液相色谱-质谱法测定辣椒制品中苏丹红(Ⅰ、Ⅱ、Ⅲ、Ⅳ)染料 被引量:13

摘要 目的:苏丹红是一种非生物合成着色剂,致癌性很强,它是应用于油彩、腊、地板腊和香皂等化工产品中的一种着色剂,它一般不溶于水易溶于有机溶剂。所以不允许掺入食品中调色。目前,一些生产厂家为达到盈利目的,违法掺入辣椒制品中。测定苏丹红的方法目前有国标法和欧盟法。国标法提取样品麻烦,欧盟法出峰时间太慢。本文在欧盟法的基础上做了进一步改进,建立用高效液相色谱电喷雾质谱(ESI—MSn)测定。方法:通过多级质谱和保留时间对样品进行确证。并用此方法对部分产品进行了调查。结果:以峰面积定量,苏丹红Ⅰ、Ⅱ、Ⅲ、Ⅳ检出限均为0.10μg/ml。不同水平的加标回收率范围为苏丹红Ⅰ:92.3%~106.1%;苏丹红Ⅱ:91.2%~111.6%;苏丹红Ⅲ:96.1%-107.5%:苏丹红Ⅳ:91.7%~108.1%。结论:本方法具有提取样品简单、灵敏度高、选择性好、可重复性好等特点。 Objective: Sudan red are oil soluble, carcinogenesis non- biotic synthesized dye commonly used in the grease paint, wax, floor wax and soap industries, not approved at any level for use in foods. However, some factory used Sudan red illegally in chili products to gain profit. At present, national standard method and EU method were used to detect Sudan red, but the national standard method was complex on distill and the EU method got a long time waiting on the peak. We improved the EU method and used the ESI - MSn to detect. Methods:To verify samples by multilevel MS and retention time, and investigated some products by the method. Results:Quantify by peak area, the limits of quantification of Sudan Ⅰ , Ⅱ, Ⅲ, Ⅳ were all 0. 10 μg/ ml. The recovery rates were Sudan Ⅰ 92. 3% - 106. 1%, Sudan Ⅱ 91.2% - 111.6%, Sudan Ⅲ 96. 1% - 107. 5%, Sudan Ⅳ 91.7% - 108. 1%. Conclusion :This method is simple on distill, high performance on sensitivity, selectivity and repeatability.
