摘要 以血红素/多肽氮比及酸溶性血红素多肽百分比为指标,研究酶法水解血红蛋白生产富血红素多肽。结果表明,热处理及超高压处理与酶解效果呈负相关的关系,而不经前处理的血红蛋白的最佳酶解条件为:Protamex/Alcalase=1∶1,E/S=2%,S%=10%,pH=8.0,45℃,12h。 The hydrolysis enzymatically of haemoglobin into heme-enriched peptide with the high ratio of heme/ peptide nitrogen and the content of acid-soluble heme peptide has been studied. The results show that thermal or high pressure treatments show negative effect on the hydrolysis.And haemoglobin without any pretreatment cbuld be well hydrolyzed into heme-enriched peptide by protamex and alcalase with a ratio 1:1, E/S=2%, S%=10%, pH= 8.0, 45℃,12h.
