摘要
介绍乌桕树──乌桕籽──乌桕脂的开发利用途径，即由乌桕脂的化学组成和结构与天然可可脂的类同之处，说明乌桕脂可用于制取可可脂代用品。从我国近年对乌桕脂制取可可脂代用品开发研究的概况，展望我国利用乌桕脂制取可可脂代用品的良好前景。
The deveopment and utilization of Chinese tallow tree, Chinese tallow seed and Chinese vegetable tallow are introduced. The R&d and prospect of cocoa butter substitute in recent years, preparation from Chinese vegetable tallow are also described in this article.
