果实中糖分的积累与代谢研究进展 被引量:17

摘要 糖不仅是影响果实甜度的物质,而且还是酸、类胡萝卜素和其他营养成分及芳香物质等合成的基础原料,对果实品质的形成起着至关重要的作用。本文综述了果实中糖分的种类、转化和分布,糖分进入果实的途径,糖分在果实中的积累与代谢及糖分的调节与运输研究进展,以期为提高果实品质提供参考。
