茄子果实发育过程中主要营养成分动态变化 被引量:15

摘要 分析了茄子果实生长发育过程中鲜重变化及可溶性固形物、蛋白质、氨基酸、茄红素、Vc的含量变化,并对门茄和对茄商品成熟果实的营养成分进行了分析比较。结果表明:其可溶性固形物、蛋白质、氨基酸、Vc含量都呈现出先升高,后降低的变化趋势;茄红素含量呈现先由高到低、后由低到高的变化趋势;门茄的主要营养成分含量均高于对茄。 The fresh weights and soluble solids, protein and amino acid and lycopene, vitamin C contents of eggplant fruits at different developmental stages were measured. The results showed that the soluble solid, protein, amino acid, vitamin C contents appeared to increase at the beginning and decline later on, and the lycopene content appeared to decrease initially and then rise. The nutrient contents of the fruits on the main stem and the fruits on the in'st pair of the shoots were compared, which indicated the nutrient contents of the fruits on the main stem were higher that those on the first pair of shoots.
