摘要
采用微分脉冲法和循环伏安法对姜辣素的电化学行为进行了探讨。结果表明,姜辣素的良好抗氧化性源于其强的电化学活性;在pH4~9的范围内,姜辣素的电化学活性随着pH的降低而减弱;姜辣素的氧化峰电位Epa为0.16V,氧气的析出电势为0.39V,它与氧气作用时表现出还原性,通过得氧而发生氧化反应;姜辣素的循环伏安扫描曲线表现为准可逆反应。
The electrochemistry behaviors of gingerol were tested with differential pulse voltammetry and cyclic voltammetry in this article. The results indicated that the good anti-oxidation characteristic of gingerol was based on its great electrochemistry activeness. It was found that the activity was enhancing when pH was from 4 to 9, and gingerol's Fpa (electric potential of oxidation peak) was 0.16V, the precipitation electric potential of oxygen was 0.39V. Thus gingerol displayed the reducibility when it acted on active oxygen atoms, it took place oxidation reaction through receiving oxygen. Furthermore, the cyclic Voltammetry curve of gingerol indicated that the reaction was half reversible process.
