摘要 采用法尔凯耐高温活性酒用干酵母,进行了玉米粉边糖化边浓醪酒精发酵.考察了发酵剂、pH值、营养盐对发酵结果的影响.当调浆料水比为1∶2.11,经过50.5 h发酵,成熟醪中酒份达到16.12%,残还原糖0.22%,残总糖1.26%,淀粉实际产酒率52.29%,淀粉利用率92.08%. Taking the corn powder as the raw material,the experiment of high gravity ethanol fermentation while sacchairfying was studied with Faerkai TH-AADY. The influence of the quantity of the yeast, pH value, and the Nutritious Salt is investigated. The experiment indicates that the satisfactory fermentation results (etha- nol concentration is 16.12% ,survival reducing sugar is 0.22%, survival total sugar is 1.26% ,starch reality ethanol productivity is 52.29%, and starch utiliTatiou ratio is 92.08% ) can be achieved when the ratio of corn powder and water is 1:1.21 and the fermentation time is .50.5h.
