壳聚糖对大肠杆菌的抑制作用规律及抗菌机理初探 被引量:13

摘要 考察了不同分子量壳聚糖对大肠杆菌的抑菌性能,利用壳聚糖的席夫碱反应对其氨基加以保护,探讨了壳聚糖对大肠杆菌的抗菌机理。研究结果表明:壳聚糖分子量越小,对大肠杆菌的抗菌作用越明显;壳聚糖对大肠杆菌的抑菌作用与其氨基的质子化有关。 The antibacterial ability of chitosan with different molecular weight on Escherichia coli was studied. The antibacterial mechanism was investigated by protecting amino group with Schiff's base. The study showed that chitosan with lower molecular weight possessed stronger antibacterial ability against Escherichia coli and the antibacterial activity was related to the protonation of amino groups.
