摘要
简要介绍了蛋白与多糖复合作用及键合模式,探讨了蛋白-多糖复合物对溶解性、乳化性、抗氧化性和抗菌性的影响,概括了蛋白-多糖复合物在众多领域的研究进展。
The interactions and principium mode between protein and polysaccharide were discussed. It seemed that the conjugation possessed excellent improvement in dissolution, emulsification, antioxidation and antibacterial. The application of conjugation of protein-polysaccharides was summed up.
