摘要 介绍了栅栏技术的提出和基本原理,栅栏因子的种类,并就重要栅栏因子(温度、pH值、辐照因子、压力因子、气调技术、包装材料、益生菌等)在乳品工业中的应用进行了探讨。 With the fast development in dairy industry in China, quality and security of dairy products need to be paid highly attention, The technology in the field of quality and security has been the important support for dairy industry. In this paper, we introduced the basic principle of hurdle technology and hurdle factors. Some important factors, used in dairy industry, are discussed such as temperature, pH value, radiation, pressure, MAP, package materials, probiotics and so on .
