摘要
方心芳先生是我国没有争议的酒界权威*。他是我国迄今为止唯一的终生研究酿酒并获得中国科学院院士荣誉的工业微生物学家。今年3月16日是他百年诞辰,特从方心芳遗留的手稿中整理一些片段材料,借助于曾经得到他关心和帮助的《酿酒科技》,介绍他晚年关于我国酿酒工业的几次论述,作为对这位大师的纪念。
FANG Xin-fang is an indisputable authority in wine-making industry in China. As a famous microbiologist, he was the only academician of CAS up to the present dedicating in wine-making in his whole life. March.16 2007 was his 100th birthday. He had always cared for the development of (Liquor-making Science & Technology) before his death. In order to commemorate him, (Liquor-making Science & Technology)) has sorted out his remnant manuscripts about liquor-making industry in China.
