影响猪肉品质的添加剂

摘要 随着生活水平的不断提高,消费者对猪肉品质提出了更高的要求-瘦肉率高、口感好;另一方面,猪肉销售商也要求猪肉有更长的货架寿命。为了满足这些要求,猪肉生产者就必须不断提高猪肉的品质以保持自己在市场竞争中处于相对有利的地位。而猪日粮中的添加剂直接影响猪肉的品质,本文综述了几种矿物质和维生素添加剂对猪肉品质的影响。
