摘要
大豆中含有大豆异黄酮,其主要活性成份为染料木素和大豆甙元。大豆异黄酮是引起大豆苦涩味的主要因子,同时也具有一定的生理活性。利用HPLC对黑龙江省46个主栽大豆品种(系)和6个特用豆品种的大豆异黄酮含量进行分析,筛选出3个高异黄酮含量的主栽品种和2个特用豆品系。并初步分析了遗传差异是影响大豆异黄酮含量的主要因素,同时栽培环境对大豆异黄酮含量也有影响。
Isoflavones contained in soybean seeds are responsible for the bitterness and astringency of soybean seeds, and also have some biological activities. 46 soybean cultivars for popular planting and 6 soybean cultivars for peculiar purpose in Heilongjiang province were used for isoflavones analysis by HPLC. 3 varieties with high isoflavones content and 2 atrains for peculiar purpose were obtained. The factors influencing isoflavones content are discussed.
