摘要
以玉米淀粉为主要原料,经液化、糖化后获得糖化液进行调配,然后分别接种不同乳酸菌进行发酵,通过正交试验等实验方法进行优化,确定出最佳配方和工艺条件,从而制成具有较高品质的产品。
Using corn starch as main material, after liquefaction and saccharification, several kinds of saccharifled liquid were prepared and fermented by different lactobacillus. The formular and technological conditions were optimized through orthogonal tests. Thus, a high quality health drink from fermented corn has been developed.
