摘要
小米在我国起源于黄河流域,栽培历史悠久,具有生育期短、适应性广、耐干旱、耐贫瘠、耐储存等优点,是北方地区广泛种植的一种小杂粮,它不仅营养丰富、容易消化,还可以进一步加工生产黄色素、膳食纤维等高附加值产品。对小米在食品、医药和化工行业的应用研究进行总结,并提出下一步的研究方向。
Millet plants widely in north China for its balance nutrition, flexibility, anti - drought and well - storage properties. Millet also can be converted into yellow pigments, dietary fiber, etc. as byproducts. In this article, the nutrition and function of millet is introduced, and the application in food, medicine, and chemistry industries are summarized. In the end, the future research direction is put forward.
