摘要
介绍了一种微波浸提干果、快速测定其总酸度的新方法。讨论了微波功率、微波时间、浸提液体积等因素对测定结果的影响。结果表明,以中高档功率微波浸提4min,基本可以浸提完全,用100ml的容量瓶浸提试样,浸提液体积为40~60ml时,结果较为理想。4分钟内可一次性完成20个样品的浸提工作。与国家标准方法相对照,测定速度提高了数十倍,没有显著性差异。该方法操作简便、省时、省事、节约能源、结果准确可靠、测定速度快,测定效率高,宜于批量样品的测定。
The new method of quickly treasuring the total acid of the dry fruit by soaking the dry fruit with the microwave was introduced, The influence of the microwave power, microwave time, soaking liquid volume, etc. on the measure result was discussed. Results showed that using the microwave with middle and high power to soak the dry fruit for 4 rain can soak in full. Using the vase with 100 ml volume and the soaking volume of 40 - 60 ml to soak the samples can get good result. By using this new method the soaking of 20 sample can be finished in 4 min. Compared with national standard method, the treasuring speed increases by several decuple, without the significant difference, This method has advances of being easy to control, saving time and energy sources, quick speed of high efficiency testing, which is suit for batch treasuring.
