摘要 研究超声波处理法对玉米蛋白粉(CGM)进行脱色的工艺条件和电动搅拌方式提取玉米醇溶蛋白(Zein)的最佳提取条件,确定最佳脱色条件是:以无水乙醇为溶剂,萃取温度50℃,料液比1:12(g/V),超声波处理25min;最佳提取条件是:料液比1:8(g/V),50℃水浴加热,低速搅拌提取3h,乙醇的浓度是75%。分析产品中成分,并用SDS-PAGE的方法对提取物的蛋白组成和纯度进行分析,依据分析结果,并综合考虑成本等因素,确定盐析法为玉米醇溶蛋白的回收方法,最终溶液中氯化钠浓度为0.3%。 The methods of ultrasonic decolorization for corn gluten meal(CGM) and low velocity electric distilling extraction were studied in the tests. Using absolute alcohol as solvent the best decolorise technology are that the optimum temperature was 60 ℃, ultrasonic work time was 30 min and CGM-to-solvent ratio(W/V) was 1 : 8. The optimization distilling conditions were that the optimum temperature was 50 ℃, extracting time was 3 h, CGM-to-solvent ratio(W/V) was 1 : 8 and using 75% aqueous ethanol(V/V).The ingredients of the product were analyzed and protein components were identified using SDS-PAGE. Using the method of salt out to precipitate zein. The concentration of sodium chloride was 0.3%.
