合肥市食堂卫生状况调查

Investigation of Sanitary Conditions on the Canteens in Hefei City

摘要 目的研究合肥市食堂卫生现状,为进一步做好监督监测工作提供依据。方法制定统一的调查方案,对3县4区范围内分布的集体食堂,包括学校食堂、工地食堂和单位职工食堂,采取现场检查、查阅资料和现场采样等多种方法对食堂卫生状况进行监督监测。结果共检查食堂581家。498家集体食堂中87.75%设置有专职或者兼职卫生管理员。学校食堂和单位职工食堂整体卫生状况明显好于工地食堂。学校食堂中以中小学食堂检查的各项卫生指标达标率最低。结论应将经营单位食品卫生管理员的资质审查作为卫生监督工作的一项重要内容。对工地食堂的卫生监督重点应放在对食品从业人员健康证明持证和食品采购索证方面。县级卫生监督机构应将餐饮业卫生监督的重心放在广大的农村学校。 Objective To provide the basis for distributing properly the limited resources of sanitary supervision and bringing the better effect of supervision. Methods Work out the unified plan. Take kinds of measures such as inspecting the scene, consulting the data, collecting some samples and so on, to supervise the sanitary conditions of canteens in 3 counties and 4 zones, including school cafeterias, work - site canteens and mess rooms for staffs. Results 581 canteens were checked altogether. Among 498 collective canteens, 87.75% had sanitary administrators. Obviously, school cafeterias and mess rooms for staffs were better than work - site canteens. Among school cafeterias, cafeterias in primary and middle schools had the lowest qualification rate. Conclusions The examination of sanitary administrator's qualifications should be regarded as an important content. The focal point of sanitary supervision on work - site canteens should be put on the healthy conditions of the staffs and certificates for trading food. County agency of sanitary supervision should put the stress of supervision to catering trade on schools in countryside.
