摘要 以杉木针叶提取叶绿素,经皂化、锌代及成盐反应制备叶绿素锌钠盐,通过正交试验确定最佳工艺条件,并对叶绿素锌钠的光稳定性、热稳定性以及耐酸碱性等方面进行研究。结果表明,最佳工艺条件为:在60℃下用无水乙醇浸提7 h,质量分数为5%的NaOH溶液皂化50 min,质量分数为20%的ZnSO4溶液锌代60 min,质量分数为5%的NaOH-C2H5OH溶液成盐。叶绿素锌钠耐热性较好,但耐光性较差。 Chlorophyllin was extracted from Chinese fir leaves by solvent, sodium zinc chlorophyllin was prepared from the chlorophyll extracted through the processes of soaption, ironing and basification, and the optimal reaction condition was determined by orthogonal experiment. Moreover, the photo-stability and thermo-stability of sodium zinc chlorophyllin and its tolerance for acidification were further studied. The results showed that the optimal reation condition was obtained as follow : extraction for 6 hours by absolute ethyl alcohol at 60 ℃, soaption for 50 min by 5% NaOH, reaction with 20% ZnSO4 for 60 min, preparation of sodium zinc chlorophyllin by 5% NaOH-C2H5OH. The study also indicated that sodium zinc chlorophyllin had good tolerance for thenno, but its photo-stability was weaker.
