苦瓜营养价值很高,含有苦瓜皂甙等物质,具有重要的保健和医疗作用。由于苦瓜含有苦瓜素等物质,苦味较重,令一些消费者难以接受。将苦味物质进行包埋,做成酸甜可口的苦瓜保健饮料,使之更易被广大消费者接受。
Being rich of nutrients and containing balsam pear saponin, balsam pear has important healthcare and treatment functions. But some bitter substances in it such as elaterin are unacceptable. In the experiment, the bitter substances were encapsuled to give a palatable balsam pear health drink with pleasant sweetness and sourness, which was believed to be accepted by most consumers.
