摘要
以鹌鹑蛋液为原料,研究鹌鹑蛋粉的冷冻干燥加工工艺。用电阻法测定鹌鹑蛋的共晶点,通过正交试验,分析了不同因素对蛋粉品质的影响,得出真空冷冻干燥鹌鹑蛋粉的最佳工艺条件:预冻温度30℃,干燥时间16h,物料厚度4mm。
Taking the Quail egg liquid as raw material, the Vacuum freeze-drying of quail egg powder was studied,The eutectic temperatures of all-egg were measured by the resistance method.This experiment explored the freeze-drying effect of the factors to the quality of powder by the orthogonal experiment and investigated the vacuum freeze-drying technology of Quail egg powder. The optimal processing technology is:Pre-freeze temperature -50℃ ,drying time 16h and the material thickness 4nm.
