摘要
功能性食品是指具有调节机体功能、预防疾病、促进健康等功能,但不以治疗为目的的食品。功能性肉制品不仅为人们提供优质的蛋白质、矿物质及维生素等营养,还具有一定的保健功能。本文介绍了通过向肉类原料中添加膳食纤维来研究开发功能性肉制品。
Functional food is the food which is able to regulate the body,prevent disease and promote health, but not for healing the illness. Functional meat product not only provides nutrition for people such as high grade protein,mineral substance and vitamin etal, but also has the certain function of health protection.This paper is studied on exploitation of functional meat products by appending dietary fiber into the raw meat.
