摘要
电刺激技术作为生产嫩羊肉,避免在排酸过程中出现冷却收缩现象的一种新技术在国外的羊屠宰加工中已经得到了广泛的应用,并形成了技术成熟的超低压电刺激、中压电刺激和高压电刺激装置和系统。本文详细介绍了各种电刺激系统的基本特点、应用情况以及最新研究进展,希望对国内的羊屠宰加工生产企业有所裨益。
The technologies and devices of electrical stimula- tion have been widely used abroad in sheep slaughtering processing for producing productions of tender lamb meat prevented from cold shortening during carcass chill in chilling room. Since 1970＇ s,there are several electrical stimulation systems or devices,including Extra Low Voltage Electrical Stimulation（ELVE）,Mid Voltage Electrical Stimulation（MVES） and High Voltage Electrical Stimulation（HVES）,which have completely been developed and used in Australia,New Zealand,Europe and USA, The features and specifications of electrical stimulation systems and devices and its applications in foreign sheep slaughterhouses as well as the latest developments are briefly introduced in this paper,and it will be useful information for domestic sheep slaughterhouses.
