摘要 实验研究了常压冷冻干燥(AFD)动力学对苹果切块质量(复水率、收缩率、色泽、抗氧化性)的影响,并与对流干燥和真空冷冻干燥进行了比较,确定了合适的操作参数。实验在因特网控制的全自动熟泵干燥系统中进行。设计建立了基于National Instruments FieldPoint平台的数据采集及控制系统,其自动控制器具有先进的嵌入式控制、数据记录以及以太网连接等功能。 The investigations of Atmospheric Freeze-Drying (AFD) kinetics effect on the quality (dehydration rate, shrinkage, color, antioxidative properties) of apple cubes are presented in the paper. The experimental data are corn pared with the results of convective and vacuum freeze drying processes, and suitable operating parameters are determined. The experiments were carried out in an internet controlled and fully automated heat-pump assisted drying system. Data acquisition and control system based on the National Instruments FieldPoint platform was designed and made. The autonomic controller was used for performing advanced embedded control, data logging and Ethernet connectivity.
